PARLOUR ST. PAUL
Jester Concepts is pleased to announce the upcoming opening of Parlour St. Paul, just blocks from the Xcel Center at 267 West 7th Street. This evolution of Parlour Bar introduces a diner and lounge to Parlour Minneapolis’s speakeasy-style ambiance.
Parlour St. Paul features three distinct spaces. The diner brings guests closer to the action by offering counter seating that overlooks the kitchen and intimate banquette tables. The central lounge space combines the atmosphere of the diner and cocktail bar with cozy tables for two and plush booths for larger groups. The cocktail bar brings the ambiance of Parlour Minneapolis across the river to St. Paul with an expansive bar and additional banquette seating.
The development of Parlour St. Paul is a sentimental project for Jester Concepts’ Bar Director, Jesse Held, who launched his career in craft cocktails at the Town Talk Diner. At Parlour St. Paul, Held will honor his past and continue to build his own legacy by including the much-missed boozy milkshake originally created for the Town Talk Diner on a full menu of his signature cocktails.
Chef Mike DeCamp, Culinary Director of Jester Concepts, has built a unique menu for Parlour St. Paul. Joining the world-famous Parlour Burger are new-classic diner dishes like scrambled eggs with king crab, avocado, and curry; a chili dog featuring brisket chili, cheese, and onion; and braised chicken with ricotta dumplings.
Equally loved since opening, our lower-level Parlour bar has set a new standard for bartending and cocktail creation. A cozy and intimate space, Parlour features a large wall of windows, tufted banquettes, small tables and a large bar and offers a small food menu. Led by Jesse Held, former North Star Bartender’s Guild President, Parlour was recognized by Playboy as one of America’s Best Bars.
Parlour’s craft cocktail menu has its foundation in the classics; a perfect martini, an old-fashioned or a gimlet. Upon this foundation the bartenders build creative new craft cocktails using fresh squeezed juice, house made syrups, elixirs and rare artisanal spirits. r
